I prepared this dish last night, my first since discovering this web site. It was delicious, lite and tasty. I did add a red pepper (sauteed) as I was a little short on tomatoes.
Served with a salad of arugula, fresh orange and blueberries with a lite lemon vinegrette. Yum!
    I am liking this.
