Ingredients:
- 1 apple, cut into matchsticks (use a sweet apple such as Red Delicious, or a tart apple such as Granny Smith)
- ½ English cucumber, chopped
- ¼ sweet onion, chopped
- 2 celery stalks, chopped fine
- ¼ cup white wine vinegar or rice wine vinegar
- Salt and pepper to taste
Directions:
- Combine all ingredients in a large bowl.
- Serve immediately, or chill in refrigerator until serving.

This sounds delish! I make a similar apple salad during the holidays (or a smaller version just for me anytime). Here’s that recipe-give it a try.
2 Gala or Fuji apples cut in 1″ chunks
2 Granny Smith apples cut in 1″ chunks
1 pkg. of whole pitted dates, cut in 1/2
1 C. of pecan halves (walnuts will work too)
3 stalks of celery, sliced into half-moons
Dressing (I don’t measure it–just enough to coat):
Juice of 2 lemons + zest
salt & pepper to taste

Hi Susan! From Debra’s post it sounds like she is making a dressing using the juice and zest of 2 lemons, olive oil (amount not specified), and salt and pepper to taste. This sounds like a delicious and simple lemon dressing that would be perfect for summer (or anytime of year). We have a similar dressing recipe you can try, our Citrus Salad Dressing. Yum!
Salad gets a bit sweeter if dressed salad sets refridgerated an hr. or so .. nice surprise…
Balsamic vinegar works nicely too!
