Simply delicious! Add some heat along with the sweet raisins by adding pepper flakes.
Ingredients
- 1 Tablespoon olive oil
- 1 onion, chopped
- ¼ teaspoon red pepper flakes (optional)
- 1 pound spinach
- 2 Tablespoons raisins
- 2 Tablespoons pine nuts, toasted
- 1 Tablespoon lemon juice
- Salt and pepper to taste
Directions
- Heat the oil in a large skillet or stir fry pan over medium heat. Add onion and cook for 10-12 minutes. Add pepper flakes (optional).
- Add the spinach and cook until wilted.
- Drain if needed and add the raisins and pine nuts.
- Add the lemon juice.
- Taste and adjust with salt and pepper.
