Ingredients

  • 1 Tablespoon olive oil
  • 1 onion, chopped
  • ¼ teaspoon red pepper flakes (optional)
  • 1 pound spinach
  • 2 Tablespoons raisins
  • 2 Tablespoons pine nuts, toasted
  • 1 Tablespoon lemon juice
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet or stir fry pan over medium heat. Add onion and cook for 10-12 minutes. Add pepper flakes (optional).
  2. Add the spinach and cook until wilted.
  3. Drain if needed and add the raisins and pine nuts.
  4. Add the lemon juice.
  5. Taste and adjust with salt and pepper.
