Tomato and Pepper Salad with Lime

Ingredients

  • 2 Roma tomatoes, seeded and chopped
  • 2 bell peppers, any color, sliced
  • 2 Tablespoons olive oil
  • 1 lime, juiced
  • ¼ cup mint, chopped
  • 10 black olives, sliced
  • 10 green olives, sliced
  • ½ cup Feta cheese, crumbled

Directions

  1. Mix the tomatoes, peppers, olive oil, lime juices, and mint in a large bowl.
  2. Place on a large platter or in a serving bowl.
  3. Top with olives and Feta cheese.
